Aloo Bhaji is a delicious side dish that goes well with Rotis, chapathis, dosas, pooris, etc. This is one of the methods to prepare Bhaji.

  1. Grind tomato and onion into fine paste.
  2. Boil potatoes and mash
  3. In kadai, heat oil.
  4. Add mustard and wait till it pops.
  5. Add red chillies and curry leaves and fry for a min.
  6. Add the ground paste and ginger garlic paste. Mix well.
  7. Add the turmeric, red chilli powder, coriander powder, cumin powder and salt.
  8. Mix well and fry till oil separates.
  9. Add the mashed potatoes and mix well.
  10. Add water till it covers the potatoes.
  11. Cook covered till raw smell goes away.
  12. Remove lid and cook till the curry reaches the desired consistency.
  13. Garnish with coriander leaves.
  14. Serve hot with chappatis or poori.
