Cooked Rice
4 Tbsp
Lemon / Lime juice
1 handful
Peanuts
5 chopped
Green chillies
1 Tbsp
Coriander leaves (to garnish)
2 Tbsp
Oil
1 Tsp
Turmeric
2 Tbsp
Grated Coconut (optional)
1 Tsp
Mustard seeds for seasoning
Lemon Rice

Yummy and Simple dish that serves as a perfect breakfast to begin the day!

 

Note: Can prepare this recipe with overnight left over rice. However, it tastes real good with freshly prepared rice!

  1. Heat oil in a kadai
  2. Add mustard seeds and let it pop, Add urad dal and channa dal and wait till they turn a light brown.
  3. Add peanuts and roast till they change color and are crisp
  4. Add green chillies, curry leaves, turmeric. Fry for about a minute. If using grated coconut, add it and fry for not more than 30 seconds.
  5. Add rice. Mix well.
  6. Add Salt to taste. Mix well. Put off the stove.
  7. Add lemon juice. Mix well. Adjust salt and lemon juice as per taste.
  8. Sprinkle coriander leaves before serving. Enjoy! :)
