Vanilla Essence
125 grams
Butter (Melted & Cooled)

Eggs

Buttermilk
1 cup
Caster Sugar
1/3 cup
Cocoa Powder

  1. Preheat oven to 180°C
  2. Lightly grease a 6cm-deep, 20cm round cake pan
  3. Line base with baking paper
  4. Sift flour, bicarbonate of soda and cocoa powder into a large bowl
  5. Stir in sugar
  6. Combine buttermilk, eggs, melted butter and vanilla in a jug
  7. Make a well in center of flour mixture
  8. Pour in buttermilk mixture
  9. Using an electric mixer, beat on low speed until combined
  10. Increase speed to high
  11. Beat for 3 to 4 minutes or until thick and creamy
  12. Pour mixture into prepared pan
  13. Bake for 40 to 45 minutes or until a skewer inserted in the center comes out clean
  14. Allow to cool in pan for 5 minutes
  15. Turn out onto a wire rack to cool completely
  16. To make chocolate icing sift icing sugar and cocoa powder into a bowl
  17. Add butter and 1 tablespoon of boiling water
  18. Stir until smooth
  19. Spread icing over cake and allow icing to set
  20. Slice and serve
