Lemon Capsicum Rice

Hi friends, now am staying in US. I like to prepare this rice dish.Whenever I have capsicum and lemon in my house, I used to prepare this in our house. Actually it is my in-law’s recipe. Lemon is good for health. Usually lemon juice is prepared in summer season. Lemon juice gives instant energy to body. Biggest use of lemons’ are its strong antibacterial, antiviral, and immune-boosting powers and their use as a weight loss aid because lemon juice is a digestive aid and liver cleanser. Lemons contain many substances–notably citric acid, calcium, magnesium, vitamin C, bioflavonoids, pectin, and limonene–that promote immunity and fight infection.

  1. Heat the pan with oil.Once oil is heated add mustard seeds and allow it to sound chatpat.
  2. Then add urad dal, split peas, turmeric powder.Wait till all the dals turn redish brown colour.
  3. Once the sizzelings are prepared to reddish brown, now add chopped chillies, chopped capsicum.
  4. Fry these vegetables with salt to taste, till they are boiled and become crispy.
  5. Add Rice to this prepared mixture and mix well. Fry the rice till all rice grains turns yellow in colour.
  6. Switch off the stove.Add the fried peanuts at last.
  7. Usually I follow this procedure in my dish so that we get roasted crispy peanuts to mouth.
